One Square’s new tasting menu is the first tasting menu in the capital to be paired with Scottish beers and spirits.
The unique creation by head-chef Craig Hart is sure to leave its mark on the Edinburgh foodie scene, fusing locally sourced produce with Scottish beers and spirits to bring an unrivalled taste of Scotland.
Highlights on the fresh Springtime menu include roasted hand dived Orkney scallop, sweet cicely carrot pureé, puffed oats, alongside One Square Gin; as well as textures of Inverurie lamb, hazelnuts, and capers, complemented by Innis & Gunn Rum Cask Finish Ale.
At £65 per person, food lovers can also wash-down the Strathdon blue trifle, walnut biscuit and Lochmanger grape chutney with a stunning 15 year-old Springbank Whisky.
The creation of the innovative tasting menu experience reiterates One Square’s commitment to working closely with local suppliers and bringing outstanding and modern Scottish cuisine.

“For this dining experience, we have worked very closely with our local partners to bring the best seasonal produce and create something different for our guests.
“It’s also incredibly exciting to be the first restaurant to be pairing our tasting menu with Scottish beers and spirits, bringing a new dimension to our much-anticipated menu for Spring.”
The Tasting Menu is served Thursday, Friday and Saturday at One Square from 6pm until 9pm. The Tasting Menu menu changes every season and changes to reflect the availability of locally sourced produce.
